Some APCA events have been organized into two segments for better clarification. The colored box above each event title indicates these designations. Their descriptions are listed below.

Optional Events (OP) Events that require an additional cost not included in the summit registration fee. These events must be registered for separately.

Educational Workshops (WS) These workshops are presented concurrently and are included in the summit registration fee.

This one-day intensive seminar is the backbone you need to start a successful personal chef business and is being taught by Candy Wallace, founder of APCA. If you are serious about becoming a personal chef, this seminar will supply the information, systems, technology and support that you need for a successful start-up.

Legacy Tours and Events Ever wondered what’s really in gumbo? Why was “ brunch” invented? To roux or not to roux? Find out the answers to these questions and more on
this exciting journey through New Orleans’ extraordinary culinary history.

Starting on the Mississippi River in The French Quarter, you’ll learn about the origins of New Orleans and the diverse cultures; French, Spanish, Italian, Native American, African, and Caribbean, which influenced New Orleans’ world famous cuisine.

In the first hour, we’ll stroll past important landmarks like Jackson Square, Café Du Monde, and the centuries-old French Market, with narrative stories along the way. At the end of The Market, we’ll board a comfortable motor coach for a narrated tour through the city, including Esplanade Ave., lined with Creole mansions; Bayou St. John, the waterway, which brought plantation goods to the city; and grand St. Charles Avenue and the beautiful Garden District. While food ways are the focus, the narration will also touch on New Orleans music, architecture, and lifestyles. By journey’s end, we hope to leave you with
an understanding of how New Orleans food is at the heart of a culture that celebrates life.
