Harry Brockwell, CEC, AAC, as vice president of St.
Augustine, Fla.-based ACF overseeing the Western
United States, is a leader among chefs in the foodservice
industry. He has served as executive-chef of myriad
operations from coast to coast. He is a member of many
distinguished culinary associations, including ACF/Channel
Islands Chefs Association, Caterina d’Medici Societie Gastronomique,
Culinary Historians of Southern California, International Food Service
Executives Association, Les Amis d’Escoffier Society, Les Toques Blanches,
Professional Chefs Association and the Research Chefs Association. He is
also a member of the honor society of ACF, the American Academy of Chefs
(AAC). Brockwell is an official certification practical-skills evaluator for ACF,
as well as an accrediting evaluator of postsecondary training programs.

After studying hotel and restaurant management at
Pennsylvania State University, Kennan apprenticed
with renowned Philadelphia chef George Stadler, giving her classical training in all areas of the kitchen and
foodservice management. She began her career in 1982 as garde manger
for the Adam’s Mark Hotel and saucier for Americas Restaurant in the
Sheraton Society Hill under Henry Petrowski, beginning 10 years of finedining
experience in premier Philadelphia hotels and country inns. Kennan
then brought her talents to San Diego, where she became executive chef
of Barnetts. She further strengthened her management skills working for
Fisher Produce Company, acting as a corporate chef liaison to major hotel
accounts. At the Getty, she oversees menu development of casual and
fine-dining concepts, museum-exhibition openings and special projects.
Kennan also serves as president of Louisville, Ky.-based Women Chefs &
Restaurateurs.
Deborah Schneider, CEC
Del Mar Racetrack Turf Club and Fairgrounds
Deborah Schneider, CEC, is executive chef for Premier
Foods at Del Mar Fairgrounds and Race Track in San
Diego. Prior to joining Premier in March 2006, she was
executive chef of the popular Jsix/Jbar in downtown San
Diego. Previously, she was executive chef of the four-star
Hilton La Jolla Torrey Pines for six years. Other stops in
her 25-year career include the venerable Grant Grill (where she was the
first female chef), Dobson’s Restaurant and La Gran Tapa, all in San Diego.
Her first cookbook, ¡Baja! Cooking On the Edge, featuring the foods and
wines of Baja California, debuted in May 2006. She writes food features
for the San Diego Union-Tribune and San Diego Garden Compass, and
teaches at area cooking schools and private classes. She is a member of
the International Association of Culinary Professionals (IACP) and a charter
member of Les Dames d’Escoffier of San Diego. She is past president and
secretary of the Chefs of San Diego Celebration Foundation, which raises
money for culinary scholarships.

Lee Silber is the award-winning author of 11 books,
including Self-Promotion for the Creative Person (2002
winner of the Theodor S. Geisel Award for outstanding
writing), and four other books to help creative people
build their businesses. The founder of five companies,
Silber owned and operated Waves & Wheels Surfcenters,
a chain of retail stores in San Diego. A popular presenter, Silber
has delivered more than 700 presentations, and was the lead trainer for
SkillPath Seminars for more than five years. He has appeared in the media
more than 800 times (including USA Today and The New York Times) and is
a former radio talk-show host.
